Orange Bourbon is a natural mutation of Red Bourbon found in the Santa Ana-Lamatepec mountain range.
It's harder to tell when Orange Bourbon is at optimal ripeness, since the color changes are much more subtle than with the Red variant.
We processed this lot on site at the farm with a portable depulper. With the beans still heavy with fruit, we placed them on raised beds for 14 days, at 1500 mts.
The coffee will stay stored at that altitude until its ready to be dehulled and shipped.
